Ingredients

    • 1 lb ground beef
    • 1/2 cup breadcrumbs
    • 1 egg
    • 2 cloves garlic, minced
    • 2 green onions, finely chopped
    • 1 tablespoon soy sauce
    • 1 teaspoon sesame oil
    • 1/4 teaspoon black pepper

For the Korean BBQ glaze:

    • 1/3 cup Korean BBQ sauce (store-bought or homemade)
    • 1 tablespoon honey
    • 1 teaspoon rice vinegar
    • 1/2 teaspoon sesame seeds

For the spicy mayo dip:

  • 1/2 cup mayonnaise
  • 12 tablespoons sriracha
  • 1 teaspoon lime juice
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, egg, garlic, green onions, soy sauce, sesame oil, and black pepper.
  3. Mix until just combined, then roll into 1-inch meatballs. Place on the prepared baking sheet.
  4. Bake for 12–15 minutes or until cooked through.
  5. While baking, whisk together Korean BBQ sauce, honey, rice vinegar, and sesame seeds in a small saucepan. Warm over low heat.
  6. Once the meatballs are cooked, toss them in the warm Korean BBQ glaze until fully coated.
  7. For the spicy mayo, mix mayonnaise, sriracha, lime juice, and garlic powder until smooth.
  8. Serve the glazed meatballs warm with the spicy mayo dip on the side.

Notes

For extra heat, add gochujang to the glaze. These meatballs can be made ahead—simply bake and refrigerate, then reheat and glaze before serving. Ground turkey or chicken works great as a lighter option.
