These Kid-Friendly Healthy Oatmeal Pumpkin Cookies are soft, chewy, and naturally sweetened—perfect for lunchboxes or an after-school snack!

- 1 cup pumpkin puree
- 1/4 cup maple syrup or honey
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup coconut oil, melted
- 1 cup rolled oats
- 3/4 cup whole wheat flour
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1/3 cup mini chocolate chips (optional)
- 1/4 cup raisins or chopped dried fruit (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together pumpkin, maple syrup, egg, vanilla, and melted coconut oil.
- In a separate bowl, mix oats, flour, baking soda, cinnamon, nutmeg, and salt.
- Combine wet and dry ingredients, stirring just until mixed. Fold in chocolate chips or dried fruit if using.
- Drop tablespoon-sized scoops onto the baking sheet. Flatten slightly with a spoon or fingers.
- Bake for 10–12 minutes until set and lightly golden. Cool on a wire rack before serving.
Notes
For a nut-free version, ensure chocolate chips and other mix-ins are nut-free. Store in an airtight container for up to 5 days or freeze for longer storage.
