  2. Make the filling: In a bowl, whisk egg yolks until pale. Add condensed milk, lime juice, and zest. Whisk until smooth and thickened.
  3. Assemble and bake: Pour filling over crust. Bake for 15 minutes until set. Cool completely, then refrigerate for at least 2 hours.
  4. Serve: Cut into bars and top with whipped cream and lime slices if desired.

Notes

For a crispier crust, chill it for 30 minutes before adding the filling. These bars hold best when chilled overnight and cut with a hot knife for clean edges.
