- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 3 large egg yolks
- 1 (14 oz) can sweetened condensed milk
- 1/2 cup key lime juice (fresh or bottled)
- 1 tablespoon lime zest
- Whipped cream and lime slices, for topping (optional)
Instructions
- Prepare the crust: Preheat oven to 350°F (175°C). Mix graham crumbs, sugar, and melted butter. Press into a parchment-lined 8×8-inch baking dish. Bake for 10 minutes, then cool slightly.
- Make the filling: In a bowl, whisk egg yolks until pale. Add condensed milk, lime juice, and zest. Whisk until smooth and thickened.
- Assemble and bake: Pour filling over crust. Bake for 15 minutes until set. Cool completely, then refrigerate for at least 2 hours.
- Serve: Cut into bars and top with whipped cream and lime slices if desired.
Notes
For a crispier crust, chill it for 30 minutes before adding the filling. These bars hold best when chilled overnight and cut with a hot knife for clean edges.
