Deliciously moist Key Lime Cake with creamy lime frosting

Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tbsp key lime zest
  • ¼ cup key lime juice
  • ¾ cup buttermilk
  • 2 tbsp key lime curd (for filling)

For the Glaze:

  • 1 cup powdered sugar
  • 2 tbsp key lime juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch cake pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in key lime zest.
  4. Gradually add the flour mixture to the butter mixture, alternating with buttermilk, beginning and ending with the flour mixture. Stir in ¼ cup of key lime juice.
  5. Pour the batter into the prepared pan and bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the glaze, whisk together powdered sugar and 2 tbsp of key lime juice until smooth. Drizzle over the cooled cake.
  8. Optionally, cut the cake in half horizontally and spread key lime curd between the layers before glazing.
