- 1 ¾ cups all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tbsp key lime zest
- ¼ cup key lime juice
- ¾ cup buttermilk
- 2 tbsp key lime curd (for filling)
For the Glaze:
- 1 cup powdered sugar
- 2 tbsp key lime juice
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch cake pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, beat the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in key lime zest.
- Gradually add the flour mixture to the butter mixture, alternating with buttermilk, beginning and ending with the flour mixture. Stir in ¼ cup of key lime juice.
- Pour the batter into the prepared pan and bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the glaze, whisk together powdered sugar and 2 tbsp of key lime juice until smooth. Drizzle over the cooled cake.
- Optionally, cut the cake in half horizontally and spread key lime curd between the layers before glazing.
