- 1 lb thinly sliced beef (ribeye or sirloin)
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 1 cup shredded mozzarella (for keto dough)
- 3/4 cup almond flour
- 2 oz cream cheese
- 1 large egg
- 4 slices provolone cheese
- 1 tbsp olive oil
- Salt & pepper, to taste
- 1/2 tsp garlic powder
Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Heat olive oil in a skillet over medium heat. Add onions and peppers and sauté until softened.
- Add the sliced beef to the skillet and cook until browned. Season with salt, pepper, and garlic powder. Set aside to cool slightly.
- To make the keto dough, microwave the mozzarella and cream cheese for 1 minute, stir, then microwave for another 30 seconds until melted.
- Mix in the almond flour and egg. Knead until a smooth dough forms.
- Roll out the dough between two sheets of parchment into a rectangle.
- Layer the provolone slices over the dough, then spread the beef and pepper mixture evenly on top.
- Roll up tightly into a log and slice into 6–8 rolls.
- Place on the baking sheet and bake for 18–22 minutes or until golden brown.
- Cool slightly and serve warm!
Notes
💡 Tip: Add mushrooms or a dash of Worcestershire sauce for classic Philly flavor! These also reheat beautifully, making them great for meal prep.
