- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 4 cups broccoli florets (fresh or frozen)
- 1/4 cup beef broth (or water)
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (or mozzarella)
- 1 tablespoon olive oil (if needed)
Instructions
- Cook the Beef: In a large skillet over medium heat, cook ground beef until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add Onion and Garlic: Stir in chopped onion and garlic. Sauté for 2–3 minutes until fragrant and softened.
- Add Broccoli and Seasonings: Add broccoli florets, beef broth, smoked paprika, Italian seasoning, salt, and pepper. Stir to combine and cover the skillet. Cook for 5–8 minutes until broccoli is tender.
- Melt the Cheese: Reduce heat to low. Sprinkle cheese evenly over the top. Cover and cook for 2–3 minutes more, until melted and bubbly.
- Serve: Garnish with fresh herbs or red pepper flakes if desired. Serve warm as a satisfying low-carb meal!
Notes
Use frozen broccoli if short on time—just thaw and drain first. Add a dash of hot sauce or Dijon mustard for an extra flavor boost. Swap cheddar for pepper jack if you like it spicy!
