Ingredients

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups broccoli florets (fresh or frozen)
  • 1/4 cup beef broth (or water)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (or mozzarella)
  • 1 tablespoon olive oil (if needed)

Instructions

  1. Cook the Beef: In a large skillet over medium heat, cook ground beef until browned, breaking it apart as it cooks. Drain excess fat if needed.
  2. Add Onion and Garlic: Stir in chopped onion and garlic. Sauté for 2–3 minutes until fragrant and softened.
  3. Add Broccoli and Seasonings: Add broccoli florets, beef broth, smoked paprika, Italian seasoning, salt, and pepper. Stir to combine and cover the skillet. Cook for 5–8 minutes until broccoli is tender.
  4. Melt the Cheese: Reduce heat to low. Sprinkle cheese evenly over the top. Cover and cook for 2–3 minutes more, until melted and bubbly.
  5. Serve: Garnish with fresh herbs or red pepper flakes if desired. Serve warm as a satisfying low-carb meal!

Notes

Use frozen broccoli if short on time—just thaw and drain first. Add a dash of hot sauce or Dijon mustard for an extra flavor boost. Swap cheddar for pepper jack if you like it spicy!
