- 1 1/2 cups granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 (20 oz) can crushed pineapple, drained
- 1/2 cup buttermilk
- 1 cup shredded coconut (optional)
- 1 (8 oz) package cream cheese, softened
- 1/2 cup unsalted butter, softened (for frosting)
- 3–4 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture alternately with buttermilk, beginning and ending with dry ingredients. Mix until just combined.
- Fold in drained crushed pineapple and shredded coconut (if using).
- Pour batter into prepared pan and smooth the top.
- Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow cake to cool completely in the pan before frosting.
- For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, mixing until creamy.
- Spread frosting evenly over cooled cake and serve.
Notes
For extra tropical flavor, top with toasted coconut or maraschino cherries. The cake keeps well in the refrigerator for up to 5 days and tastes even better the next day as flavors meld.
