  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 (20 oz) can crushed pineapple, drained
  • 1/2 cup buttermilk
  • 1 cup shredded coconut (optional)
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup unsalted butter, softened (for frosting)
  • 34 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture alternately with buttermilk, beginning and ending with dry ingredients. Mix until just combined.
  6. Fold in drained crushed pineapple and shredded coconut (if using).
  7. Pour batter into prepared pan and smooth the top.
  8. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow cake to cool completely in the pan before frosting.
  10. For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, mixing until creamy.
  11. Spread frosting evenly over cooled cake and serve.

Notes

For extra tropical flavor, top with toasted coconut or maraschino cherries. The cake keeps well in the refrigerator for up to 5 days and tastes even better the next day as flavors meld.
