- 3 lb beef chuck roast
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 3 large onions, thinly sliced
- 3 cloves garlic, minced
- 1 packet French onion soup mix
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 tablespoon butter
- Fresh parsley for garnish
Instructions
- Season roast generously with salt and pepper.
- Heat olive oil in a large pot or Dutch oven and sear roast on all sides.
- Remove roast and set aside.
- Add onions and cook until caramelized, about 10 minutes.
- Stir in garlic and cook 30 seconds.
- Return roast to pot and sprinkle soup mix over top.
- Pour in beef broth and Worcestershire sauce.
- Add thyme and butter.
- Cover and simmer on low for 3β4 hours until fork-tender.
- Garnish with parsley and serve hot.
