Ingredients

  • 3 lb beef chuck roast
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 3 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 packet French onion soup mix
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 tablespoon butter
  • Fresh parsley for garnish

Instructions

  1. Season roast generously with salt and pepper.
  2. Heat olive oil in a large pot or Dutch oven and sear roast on all sides.
  3. Remove roast and set aside.
  4. Add onions and cook until caramelized, about 10 minutes.
  5. Stir in garlic and cook 30 seconds.
  6. Return roast to pot and sprinkle soup mix over top.
  7. Pour in beef broth and Worcestershire sauce.
  8. Add thyme and butter.
  9. Cover and simmer on low for 3–4 hours until fork-tender.
  10. Garnish with parsley and serve hot.
