- 3 very ripe bananas, mashed
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- Optional: 1/2 cup chopped pecans or walnuts

- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- Cream butter and sugar together until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Stir in mashed bananas and vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients, mixing just until combined.
- Fold in nuts if using.
- Pour batter into prepared loaf pan and smooth the top.
- Bake 55–65 minutes, or until a toothpick inserted comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack.
Notes
For best results, use very ripe bananas with brown spots. This bread tastes even better the next day and freezes beautifully for later enjoyment.
