A light and flavorful Japanese Mushroom Soup made with a savory dashi broth, tender mushrooms, and aromatic seasonings. A nourishing and umami-rich soup that pairs beautifully with any Japanese meal.

- 6 cups dashi broth (or vegetable broth)
- 1 tbsp soy sauce
- 1 tbsp mirin
- 1 tsp sesame oil
- 200 g (7 oz) shiitake mushrooms, sliced
- 100 g (3.5 oz) enoki mushrooms, trimmed
- 100 g (3.5 oz) shimeji mushrooms, trimmed
- 2 green onions, thinly sliced
- 1 small piece kombu (optional, for extra umami)
- Salt, to taste
Instructions
- Prepare dashi broth (or use vegetable broth for a vegetarian option). Add kombu if using, and gently simmer for extra flavor, then remove kombu before boiling.
- Add shiitake, enoki, and shimeji mushrooms to the broth. Simmer for 5–7 minutes, until tender.
- Stir in soy sauce, mirin, and sesame oil. Taste and adjust seasoning with salt if needed.
- Ladle into bowls, garnish with sliced green onions, and serve hot.
Notes
For a heartier soup, add tofu cubes or udon noodles. You can also experiment with other Japanese mushrooms like maitake or oyster mushrooms.
