- 1/2 lb ground beef
- 1/2 lb ground pork
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 tsp dried oregano
- 1 tsp dried parsley
- Salt and black pepper, to taste
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 cup small pasta (acini di pepe or orzo)
- 2 cups fresh spinach or escarole, chopped
- Grated Parmesan, for garnish

- In a bowl, combine ground beef, ground pork, breadcrumbs, Parmesan, egg, oregano, parsley, salt, and pepper. Mix gently.
- Form small meatballs, about 1 inch in diameter.
- Heat olive oil in a large pot over medium heat. Brown the meatballs lightly, then remove and set aside.
- Add onion and garlic to the pot; sauté 2–3 minutes until fragrant.
- Pour in chicken broth and bring to a boil.
- Add pasta and cook 8–10 minutes, then return meatballs to the pot. Simmer until fully cooked.
- Stir in chopped spinach or escarole and cook 2–3 minutes until wilted.
- Adjust seasoning, garnish with Parmesan, and serve hot.
Notes
For convenience, meatballs can be made ahead and frozen. Add a squeeze of lemon juice for extra brightness if desired.
