  • 1/2 lb ground pork
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • Salt and black pepper, to taste
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup small pasta (acini di pepe or orzo)
  • 2 cups fresh spinach or escarole, chopped
  • Grated Parmesan, for garnish

  1. In a bowl, combine ground beef, ground pork, breadcrumbs, Parmesan, egg, oregano, parsley, salt, and pepper. Mix gently.
  2. Form small meatballs, about 1 inch in diameter.
  3. Heat olive oil in a large pot over medium heat. Brown the meatballs lightly, then remove and set aside.
  4. Add onion and garlic to the pot; sauté 2–3 minutes until fragrant.
  5. Pour in chicken broth and bring to a boil.
  6. Add pasta and cook 8–10 minutes, then return meatballs to the pot. Simmer until fully cooked.
  7. Stir in chopped spinach or escarole and cook 2–3 minutes until wilted.
  8. Adjust seasoning, garnish with Parmesan, and serve hot.

Notes

For convenience, meatballs can be made ahead and frozen. Add a squeeze of lemon juice for extra brightness if desired.
