- 1 lb ground beef or a mix of beef and pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- Salt and black pepper, to taste
- 6 cups chicken broth
- 1 cup small pasta (acini di pepe or orzo)
- 2 cups fresh spinach or escarole, chopped
- 1 medium carrot, diced
- 1 celery stalk, diced
- 1 small onion, diced
- 1 tsp dried Italian herbs or parsley
- Optional garnish: extra grated Parmesan

- Prepare meatballs: In a bowl, combine ground meat, breadcrumbs, Parmesan, egg, garlic, salt, and pepper. Form into small 1-inch meatballs.
- Sauté vegetables: In a large pot, sauté onion, carrot, and celery for 3–4 minutes until softened.
- Add broth: Pour in chicken broth and bring to a gentle boil.
- Carefully add meatballs to the simmering broth. Cook 8–10 minutes until meatballs are cooked through.
- Add pasta and cook until tender, about 6–8 minutes.
- Stir in chopped spinach or escarole and Italian herbs. Cook 2–3 minutes until greens are wilted.
- Taste and adjust seasoning. Serve hot, garnished with extra Parmesan if desired.
Notes
For a lighter version, use turkey or chicken for the meatballs. The soup can also be frozen before adding pasta for easy meal prep.
