Ingredients

Scale

Ingredients

  • 1 lb ground beef or a mix of beef and pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • 6 cups chicken broth
  • 1 cup small pasta (acini di pepe or orzo)
  • 2 cups fresh spinach or escarole, chopped
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 1 small onion, diced
  • 1 tsp dried Italian herbs or parsley
  • Optional garnish: extra grated Parmesan

Instructions

Instructions

  1. Prepare meatballs: In a bowl, combine ground meat, breadcrumbs, Parmesan, egg, garlic, salt, and pepper. Form into small 1-inch meatballs.
  2. Sauté vegetables: In a large pot, sauté onion, carrot, and celery for 3–4 minutes until softened.
  3. Add broth: Pour in chicken broth and bring to a gentle boil.
  4. Carefully add meatballs to the simmering broth. Cook 8–10 minutes until meatballs are cooked through.
  5. Add pasta and cook until tender, about 6–8 minutes.
  6. Stir in chopped spinach or escarole and Italian herbs. Cook 2–3 minutes until greens are wilted.
  7. Taste and adjust seasoning. Serve hot, garnished with extra Parmesan if desired.

Notes

For a lighter version, use turkey or chicken for the meatballs. The soup can also be frozen before adding pasta for easy meal prep.
