- 1 lb Italian sausage (mild or spicy), casings removed
- 1 tbsp olive oil (if needed)
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/4 tsp red pepper flakes (optional)
- 4 cups chicken broth
- 2 cans (15 oz each) white beans, drained and rinsed
- 2 cups fresh spinach or kale
- Salt and black pepper, to taste
- Optional garnish: grated Parmesan cheese

- In a large pot over medium heat, brown the Italian sausage until cooked through. Remove and set aside.
- Add onion, carrots, and celery; sauté 4–5 minutes until softened.
- Add garlic, thyme, oregano, and red pepper flakes; cook 30 seconds until fragrant.
- Return sausage to the pot and pour in chicken broth. Bring to a boil, then reduce heat and simmer 15 minutes.
- Add white beans and cook 5 minutes until heated through.
- Stir in spinach or kale and cook 2–3 minutes until wilted.
- Season with salt and black pepper to taste. Serve hot with grated Parmesan if desired.
Notes
For a creamier soup, mash some of the beans before adding the greens. You can also add cooked pasta for a more filling version.
