  • 1 lb Italian sausage (mild or spicy), casings removed
  • 1 tbsp olive oil (if needed)
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • 4 cups chicken broth
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 2 cups fresh spinach or kale
  • Salt and black pepper, to taste
  • Optional garnish: grated Parmesan cheese

  1. In a large pot over medium heat, brown the Italian sausage until cooked through. Remove and set aside.
  2. Add onion, carrots, and celery; sauté 4–5 minutes until softened.
  3. Add garlic, thyme, oregano, and red pepper flakes; cook 30 seconds until fragrant.
  4. Return sausage to the pot and pour in chicken broth. Bring to a boil, then reduce heat and simmer 15 minutes.
  5. Add white beans and cook 5 minutes until heated through.
  6. Stir in spinach or kale and cook 2–3 minutes until wilted.
  7. Season with salt and black pepper to taste. Serve hot with grated Parmesan if desired.

Notes

For a creamier soup, mash some of the beans before adding the greens. You can also add cooked pasta for a more filling version.
