  • 1 cup small pasta (ditalini or acini di pepe)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese
  • Optional: lemon juice for brightness

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. SautΓ© onion, carrots, and celery for 5 minutes until softened.
  3. Add garlic and cook for 30 seconds.
  4. Pour in chicken broth and bring to a boil.
  5. Stir in shredded chicken, Italian seasoning, thyme, salt, and pepper.
  6. Add pasta and simmer 8–10 minutes until tender.
