- 12 large eggs
- 1/2 cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon Dijon mustard
- 1 tablespoon sweet pickle relish
- 1 teaspoon white vinegar
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon paprika
- Salt and pepper, to taste
- For topping: Smoked paprika, fresh chives, crispy bacon bits (optional)
Instructions
- Place eggs in a large pot and cover with cold water. Bring to a boil.
- Once boiling, turn off heat, cover, and let eggs sit for 10–12 minutes.
- Transfer eggs to an ice bath and cool completely.
- Peel the eggs and slice them in half lengthwise.
- Remove yolks and place them in a mixing bowl.
- Mash the yolks with mayo, sour cream, Dijon mustard, relish, vinegar, garlic powder, onion powder, paprika, salt, and pepper until smooth.
- Spoon or pipe the filling back into the egg whites.
- Top with smoked paprika, chives, or bacon bits if desired.
- Refrigerate for at least 30 minutes before serving for best flavor.
Notes
For extra-smooth filling, blend the yolk mixture with a food processor. To make ahead, prepare up to 24 hours in advance and store covered in the refrigerator. Add toppings right before serving.
