- 3 lbs beef chuck roast
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 large carrots, peeled and chopped
- 3–4 potatoes, peeled and chopped
- 2 cups beef broth
- 1 cup Guinness stout or Irish beer (optional)
- 2 tsp fresh thyme leaves
- 1 tsp fresh rosemary, chopped
- 2 bay leaves
- 2 tbsp all-purpose flour (optional, for thickening)

- Season beef roast generously with salt and black pepper.
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear beef on all sides until browned. Remove and set aside.
- In the same pot, sauté onion and garlic until softened.
- Return beef to the pot. Add carrots, potatoes, broth, Guinness (if using), thyme, rosemary, and bay leaves.
- Bring to a simmer, cover, and reduce heat to low. Cook 2–3 hours, until beef is tender and falls apart easily.
- Optional: Mix flour with a little water to make a slurry, stir into the pot, and simmer a few minutes to thicken the gravy.
- Remove bay leaves, slice or shred beef, and serve with vegetables and rich gravy.
Notes
For extra flavor, marinate the roast in Guinness and herbs overnight. Serve with crusty bread or mashed potatoes for a complete Irish meal.
