  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 3 cups old-fashioned rolled oats
  • Optional: 1/2 cup raisins or chopped walnuts

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then mix in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add dry ingredients to wet ingredients until combined.
  6. Stir in rolled oats and optional raisins or walnuts.
  7. Scoop dough into 1½-inch balls and place on baking sheets 2 inches apart.
  8. Flatten slightly with the back of a spoon.
  9. Bake for 10–12 minutes until edges are golden and centers are set.
  10. Cool on baking sheet for 5 minutes before transferring to a wire rack.

Notes

For chewier cookies, slightly underbake. Use Irish rolled oats for extra authenticity. These cookies store well in an airtight container for up to 5 days.
