- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup sliced green onions
- Optional toppings: sour cream, diced tomatoes, jalapeños

- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss potato slices with olive oil, salt, and pepper. Spread in a single layer on the baking sheet.
- Bake for 20–25 minutes until golden and crispy, flipping halfway through.
- Remove from oven and transfer to an oven-safe serving dish.
- Sprinkle shredded cheddar cheese and crumbled bacon over the potatoes.
- Bake for an additional 5–7 minutes until cheese is melted.
- Garnish with green onions and optional toppings. Serve warm.
Notes
For extra crispiness, soak potato slices in cold water for 15 minutes and pat dry before baking. Can also be made with sweet potatoes for a twist.
