- 2 lbs lamb shoulder, cut into 1-inch cubes
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 large carrots, chopped
- 2–3 potatoes, peeled and chopped
- 2 cups beef or lamb broth
- 1 cup Guinness stout (optional)
- 2 tsp fresh thyme leaves
- 1 tsp fresh rosemary, chopped
- 2 bay leaves
- 1 tbsp tomato paste
- 2 tbsp all-purpose flour (optional, for thickening)

- Season lamb cubes with salt and black pepper.
- Heat olive oil in a large pot over medium-high heat. Brown lamb on all sides. Remove and set aside.
- In the same pot, sauté onion and garlic until softened.
- Stir in tomato paste and cook 1–2 minutes.
- Add broth and Guinness (if using), scraping up browned bits.
- Return lamb to the pot along with carrots, potatoes, thyme, rosemary, and bay leaves.
- Bring to a simmer, then reduce heat to low. Cover and cook 1.5–2 hours until lamb is tender.
- Optional: Mix flour with a little water to make a slurry and stir into stew to thicken before serving.
- Remove bay leaves and serve hot with fresh parsley and crusty bread.
Notes
For extra depth of flavor, marinate lamb in Guinness and herbs overnight. Leftovers taste even better the next day.
