- 1 lb boneless skinless chicken breasts, diced
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup long-grain white rice, rinsed
- 2 1/2 cups chicken broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp dried thyme
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup frozen peas or mixed vegetables
- Fresh parsley for garnish

- Set Instant Pot to Sauté mode and heat olive oil.
- Add chicken and cook 2–3 minutes until lightly browned.
- Add onion and garlic, sauté 1 minute until fragrant.
- Stir in rice, chicken broth, salt, pepper, paprika, and thyme.
- Cancel sauté. Secure lid and set valve to sealing.
- Cook on Manual / Pressure High for 8 minutes.
- Allow natural pressure release for 5 minutes, then quick release.
- Stir in heavy cream, Parmesan cheese, and vegetables.
- Let sit 3–5 minutes to thicken. Adjust seasoning if needed.
- Garnish with parsley and serve warm.
Notes
For extra creaminess, add an extra splash of cream or a spoon of cream cheese. Use brown rice only if you increase cook time to 22 minutes.
