How to Make the Best Shrimp Scampi: 7 Secrets Revealed!

  • Author: recipeinspire
  • Total Time: 20 minutes
  • Yield: 4 servings 1x

Description

This Shrimp Scampi is a restaurant-quality dish you can whip up in 20 minutes at home! Juicy shrimp are sautéed in a garlic butter and white wine sauce, then tossed with lemon and parsley for a bright, flavorful finish. Serve over pasta, rice, or with crusty bread to soak up every drop.

Ingredients

Scale
  • 12 oz (340g) large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • ¼ teaspoon red pepper flakes (optional)
  • ½ cup dry white wine (or chicken broth)
  • Juice of ½ lemon (plus extra wedges for serving)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley
  • 8 oz linguine or spaghetti, cooked (optional, for serving)

Instructions

  1. Cook the Pasta: If serving with pasta, cook it according to package instructions. Drain and set aside.
  2. Sauté the Shrimp: Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat. Add shrimp in a single layer. Cook for 1–2 minutes per side, until pink and just cooked through. Remove and set aside.
  3. Make the Sauce: Reduce heat to medium. Add remaining butter, garlic, and red pepper flakes (if using). Sauté for 1 minute until fragrant. Stir in white wine and simmer 2–3 minutes until slightly reduced.
  4. Finish: Return shrimp to pan. Add lemon juice, salt, and pepper. Toss to coat everything well. Stir in chopped parsley.
  5. Serve: Serve immediately over cooked pasta, rice, or with toasted bread. Garnish with lemon wedges and more parsley if desired.

Notes

Use high-quality shrimp—fresh or frozen and thawed. Don’t overcook the shrimp or they’ll turn rubbery. Swap wine for broth to make it alcohol-free. Add a sprinkle of grated Parmesan if you love a cheesy touch.
