Ingredients

  • 1 pound fresh green beans, trimmed
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1/4 cup olive oil
  • 1/2 cup water or vegetable broth
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • Optional: potatoes (cubed), carrots (sliced), fresh parsley

Instructions

  1. Heat olive oil in a pot and sauté onions until soft and translucent.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Stir in the green beans and coat them in the oil and aromatics.
  4. Add crushed tomatoes, water or broth, oregano, salt, and pepper.
  5. Bring to a simmer, then reduce heat and cook covered for 30–40 minutes.
  6. Uncover and cook an additional 10 minutes to thicken the sauce.
  7. Taste, adjust seasoning, and serve warm with bread or rice.

Notes

For richer flavor, add a sliced potato or carrot to the pot. This dish tastes even better the next day as the flavors develop!
