- 2 lbs boneless, skinless chicken breasts
- 1 package (20 oz) refrigerated cheese tortellini
- 3 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and black pepper to taste
- 1 cup fresh spinach (optional)
- Optional: chopped parsley for garnish

- Place chicken breasts in the bottom of the crockpot.
- Add chicken broth, garlic, Italian seasoning, paprika, salt, and pepper.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours.
- Remove chicken, shred, and return to crockpot.
- Stir in heavy cream, Parmesan, and mozzarella cheese.
- Add tortellini and spinach.
- Cover and cook on HIGH for 20–30 minutes until tortellini are tender.
- Stir well and serve hot.
Notes
For extra flavor, add sun-dried tomatoes or mushrooms. This dish thickens as it cools, making leftovers even creamier.
