  • 1/2 cup unsalted butter, softened
  • 1/2 cup honey
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Topping
  • 1/4 cup granulated sugar
  • 1 tsp cinnamon
  • Flaky sea salt for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter, honey, and brown sugar together until light and creamy, about 2 minutes.
  3. Beat in the egg and vanilla until smooth.
  4. In a separate bowl, whisk together the flour, cinnamon, baking soda, baking powder, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. In a small bowl, mix the granulated sugar and cinnamon for the topping.
  7. Roll dough into 1–1.5 tbsp balls, then roll each in the cinnamon-sugar mixture.
  8. Place on baking sheet and gently press the tops to flatten slightly.
  9. Bake for 8–10 minutes, until the edges are set but centers are still soft.
  10. Sprinkle lightly with flaky sea salt as soon as they come out of the oven.
  11. Cool for 5 minutes before transferring to a wire rack.

Notes

For extra chewiness, slightly underbake the cookies—honey keeps them soft for days. Use high-quality honey for the best flavor profile. For a stronger spice kick, add a pinch of nutmeg or cardamom to the dough.
