Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 potato, diced
  • 6 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic until fragrant and soft.
  2. Add carrots, celery, zucchini, green beans, broccoli, cauliflower, and potato. Cook for 5–7 minutes.
  3. Add diced tomatoes, vegetable broth, thyme, basil, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20–25 minutes until vegetables are tender.
  5. Adjust seasoning if needed. Serve hot, garnished with fresh parsley.

Notes

You can customize the soup with any seasonal vegetables you like. For a creamier texture, blend a portion of the soup before serving.
