- 1 lb (450g) ground beef or beef chuck, diced
- 1 onion, diced
- 2–3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (optional)
- Salt and pepper, to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro
Instructions
- In a large pot, brown the beef over medium-high heat. Drain excess fat.
- Add onion, garlic, and bell pepper. Sauté 4–5 minutes until softened.
- Stir in chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Cook 1–2 minutes to release flavors.
- Add diced tomatoes and beans. Bring to a boil, then reduce heat and simmer for 25–30 minutes.
- Adjust seasoning as needed. Serve hot with optional toppings.
Notes
For extra richness, add a splash of beef broth or simmer longer. Serve with cornbread or crusty bread for a complete meal.
