- 1 lb lean ground turkey (or ground beef)
- 1 tbsp olive oil
- 1 small onion, chopped
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 4 cups low-sodium chicken broth
- 1 cup cooked brown rice or cauliflower rice
- 1 tsp dried oregano
- 1/2 tsp paprika
- Salt and black pepper to taste
- Fresh parsley, for garnish (optional)
Instructions
- Cook turkey: In a large pot or Dutch oven, heat olive oil over medium heat. Add ground turkey and cook until browned, breaking it up with a spoon.
- Add veggies: Stir in onion, bell peppers, and garlic. Sauté until softened, about 5 minutes.
- Add liquids and seasoning: Add diced tomatoes, tomato sauce, chicken broth, oregano, paprika, salt, and pepper. Stir well.
- Simmer: Bring to a boil, then reduce heat and simmer for 25–30 minutes.
- Add rice: Stir in the cooked brown rice or cauliflower rice and simmer for another 5 minutes.
- Serve: Ladle into bowls and top with fresh parsley if desired. Enjoy warm!
Notes
To boost protein further, stir in a can of white beans or an extra ½ cup of cooked quinoa. For a low-carb option, use cauliflower rice instead of brown rice.
