  • 2 cups cooked rotisserie chicken, shredded
  • 2 cups broccoli florets, steamed or blanched

  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup Greek yogurt or light cream
  • 1/2 cup chicken broth
  • 1 teaspoon lemon juice
  • Salt and pepper, to taste
  • Red pepper flakes (optional, for heat)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook pasta according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.
  3. Add shredded rotisserie chicken and broccoli, stirring to combine and warm through.
  4. Pour in chicken broth and Greek yogurt or cream. Stir until the sauce is smooth and creamy.
  5. Add Parmesan cheese and lemon juice. Mix well, and add reserved pasta water if needed to loosen the sauce.
  6. Season with salt, pepper, and optional red pepper flakes to taste.
  7. Toss cooked pasta into the sauce until evenly coated.

Notes
