Ingredients

  • 2 cans (28 oz each) crushed tomatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 cups low-sodium vegetable broth
  • 1 cup fresh basil leaves
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)
  • 1 cup low-fat cottage cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp olive oil

Instructions

  1. In a crockpot, combine crushed tomatoes, onion, garlic, vegetable broth, basil, oregano, salt, black pepper, and red pepper flakes.
  2. Stir in olive oil, cover, and cook on low for 6–7 hours or high for 3–4 hours until flavors are well developed.
  3. Carefully transfer the soup to a blender (or use an immersion blender) and puree until smooth.
  4. Blend in cottage cheese and Parmesan until creamy and thickened.
  5. Return to crockpot to warm through, taste, and adjust seasoning as needed.
  6. Serve hot, garnished with fresh basil and extra Parmesan if desired.
