Hibachi Zucchini is a quick and flavorful side dish inspired by classic Japanese hibachi cooking. Tender zucchini sautéed with savory garlic, soy sauce, and a hint of sesame makes a perfect accompaniment to grilled meats or seafood.

- 3 medium zucchinis, sliced into half-moons
- 2 tbsp vegetable oil or sesame oil
- 3 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tsp sesame seeds (optional)
- 1/2 tsp freshly ground black pepper
- 1 green onion, sliced (for garnish)
Instructions
- Heat oil: Heat oil in a large skillet or wok over medium-high heat until shimmering.
- Sauté garlic: Add minced garlic and sauté for 30 seconds until fragrant, being careful not to burn.
- Cook zucchini: Add zucchini slices and stir-fry for 4–6 minutes until tender but still crisp.
- Add soy sauce & season: Pour in soy sauce and sprinkle black pepper, stirring to coat evenly.
- Finish & garnish: Cook for another minute to allow flavors to meld. Sprinkle sesame seeds and sliced green onions before serving.
Notes
For extra flavor, add a splash of mirin or a pinch of red pepper flakes. Hibachi zucchini pairs beautifully with fried rice, grilled chicken, or seafood. Serve immediately for best texture.
