- 1 lb boneless, skinless chicken breasts or thighs
- 1 cup couscous
- 1 1/4 cups chicken broth
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried thyme or rosemary
- Salt and pepper, to taste
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 2 tbsp fresh parsley or cilantro, chopped
- Juice of 1 lemon

- Preheat oven to 375°F (190°C). Season chicken with olive oil, garlic powder, thyme, salt, and pepper.
- Bake chicken for 20–25 minutes until cooked through (165°F / 74°C). Let rest and slice.
- Meanwhile, bring chicken broth to a boil in a small pot. Stir in couscous, cover, and remove from heat. Let sit 5 minutes, then fluff with a fork.
- In a large bowl, combine couscous, cherry tomatoes, cucumber, red onion, and feta cheese.
- Top with sliced chicken, parsley, and a drizzle of lemon juice.
- Serve warm or chilled as desired.
Notes
For extra flavor, add roasted red peppers, olives, or a spoonful of hummus. This bowl stores well for meal prep—keep dressing separate if desired.
