  • 1/2 cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tbsp milk
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Extra sugar for rolling (optional)

  • Chocolate chips
  • Mini peanut butter cups
  • Chopped peanuts

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream the butter, peanut butter, brown sugar, and granulated sugar until light and fluffy, about 2–3 minutes.
  3. Beat in the egg, milk, and vanilla until smooth and creamy.
  4. Whisk together the flour, baking soda, baking powder, and salt in a separate bowl.
  5. Gradually add dry ingredients to wet ingredients, mixing just until a soft dough forms.
  6. Roll dough into 1–1.5 tbsp balls and, if desired, roll each ball in sugar.
  7. Place on the baking sheet and lightly press the tops with a fork or the bottom of a glass.
  8. Bake 8–10 minutes—just until edges are set but centers still look soft.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For ultra-soft cookies, do not overbake—they firm up as they cool. To make them even meltier, replace 2 tbsp of butter with 2 tbsp of peanut butter. Freeze the dough balls for easy make-ahead cookies anytime!
