  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 500 g (1 lb) mushrooms (cremini, button, or wild), sliced
  • 1 cup uncooked wild rice
  • 6 cups vegetable broth (or chicken broth)
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • 1 bay leaf
  • 1 cup milk or cream (optional for creaminess)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil or butter in a large pot over medium heat. Add onion, carrots, and celery, and sauté until softened, about 5 minutes.
  2. Stir in garlic and mushrooms, cooking until mushrooms release liquid and begin to brown.
  3. Add the wild rice, broth, thyme, and bay leaf. Bring to a boil, then reduce heat to low.
  4. Cover and simmer for 45–50 minutes, or until wild rice is tender.
  5. Stir in milk or cream if desired, then season with salt and pepper to taste.
  6. Remove bay leaf, garnish with fresh parsley, and serve warm.

Notes

For a dairy-free version, skip the cream and use coconut milk for a rich, plant-based alternative. This soup stores well and tastes even better the next day.
