- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 500 g (1 lb) mushrooms (cremini, button, or wild), sliced
- 1 cup uncooked wild rice
- 6 cups vegetable broth (or chicken broth)
- 1 tsp dried thyme (or 1 tbsp fresh)
- 1 bay leaf
- 1 cup milk or cream (optional for creaminess)
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil or butter in a large pot over medium heat. Add onion, carrots, and celery, and sauté until softened, about 5 minutes.
- Stir in garlic and mushrooms, cooking until mushrooms release liquid and begin to brown.
- Add the wild rice, broth, thyme, and bay leaf. Bring to a boil, then reduce heat to low.
- Cover and simmer for 45–50 minutes, or until wild rice is tender.
- Stir in milk or cream if desired, then season with salt and pepper to taste.
- Remove bay leaf, garnish with fresh parsley, and serve warm.
Notes
For a dairy-free version, skip the cream and use coconut milk for a rich, plant-based alternative. This soup stores well and tastes even better the next day.
