Description
This Hearty Vegetarian Lentil Soup is wholesome, flavorful, and loaded with vegetables. Packed with protein and fiber from lentils, it makes a nourishing and filling one-pot meal.
Ingredients

- 2 tbsp olive oil
- 1 onion, diced
- 3 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 1/2 cups green or brown lentils, rinsed
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 tsp ground cumin
- 1 tsp dried thyme
- 1/2 tsp smoked paprika
- 2 bay leaves
- Salt and black pepper to taste
- 2 cups chopped spinach or kale
- Juice of 1/2 lemon
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and sauté for 6–7 minutes until softened.
- Stir in garlic, cumin, thyme, and paprika. Cook for 1–2 minutes until fragrant.
- Add lentils, diced tomatoes, broth, bay leaves, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 30–35 minutes until lentils are tender.
- Stir in chopped spinach or kale and cook for 2–3 minutes until wilted.
- Remove bay leaves, stir in lemon juice, and adjust seasoning.
- Serve hot, garnished with fresh parsley.
Notes
For extra creaminess, blend a portion of the soup with an immersion blender. This soup pairs beautifully with crusty bread.
