Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 1/2 cups green or brown lentils, rinsed
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • 1/2 tsp smoked paprika
  • 2 bay leaves
  • Salt and black pepper to taste
  • 2 cups chopped spinach or kale
  • Juice of 1/2 lemon
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and sauté for 6–7 minutes until softened.
  2. Stir in garlic, cumin, thyme, and paprika. Cook for 1–2 minutes until fragrant.
  3. Add lentils, diced tomatoes, broth, bay leaves, salt, and pepper. Bring to a boil.
  4. Reduce heat, cover, and simmer for 30–35 minutes until lentils are tender.
  5. Stir in chopped spinach or kale and cook for 2–3 minutes until wilted.
  6. Remove bay leaves, stir in lemon juice, and adjust seasoning.
  7. Serve hot, garnished with fresh parsley.

Notes

For extra creaminess, blend a portion of the soup with an immersion blender. This soup pairs beautifully with crusty bread.
