Ingredients

  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 potato, diced
  • 6 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic until softened and fragrant.
  2. Add carrots, celery, zucchini, green beans, broccoli, cauliflower, and potato. Cook for 5–7 minutes.
  3. Stir in diced tomatoes, vegetable broth, thyme, rosemary, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.
  5. Adjust seasoning if needed. Serve hot, garnished with fresh parsley.

Notes

For extra heartiness, you can add cooked beans or lentils. Roasting some vegetables beforehand adds richer flavor.
