- 6 large russet potatoes, peeled and diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream or half-and-half
- 2 tablespoons butter
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sour cream
- Salt and black pepper, to taste
- Optional toppings: crumbled bacon, chopped chives, extra cheese
Instructions
- Melt butter in a large pot over medium heat. Sauté onion and garlic until soft and fragrant.
- Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
- Use an immersion blender to partially blend for a rustic, chunky texture.
- Stir in heavy cream, cheddar cheese, and sour cream. Heat gently until cheese melts and soup is creamy.
- Season with salt and black pepper to taste.
- Serve hot with optional toppings for extra flavor and texture.
Notes
This soup keeps well in the fridge for up to 3 days. For a vegetarian version, use vegetable broth and skip bacon.
