  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or half-and-half
  • 2 tablespoons butter
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and black pepper, to taste
  • Optional toppings: crumbled bacon, chopped chives, extra cheese

Instructions

  1. Melt butter in a large pot over medium heat. Sauté onion and garlic until soft and fragrant.
  2. Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
  3. Use an immersion blender to partially blend for a rustic, chunky texture.
  4. Stir in heavy cream, cheddar cheese, and sour cream. Heat gently until cheese melts and soup is creamy.
  5. Season with salt and black pepper to taste.

Notes
