Description

This Hearty Lentil Soup is filling, wholesome, and packed with vegetables and spices. A comforting plant-based dish that makes a perfect weeknight dinner or meal-prep option.


Ingredients

  • 1 1/2 cups dried green or brown lentils, rinsed
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 medium potatoes, cubed
  • 1 red bell pepper, diced
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1 bay leaf
  • 8 cups vegetable broth
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 2 cups chopped spinach or kale
  • Juice of 1 lemon (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, garlic, and bell pepper. Cook for 5 minutes until softened.
  2. Stir in cumin, paprika, oregano, salt, and pepper. Cook for 1 minute until fragrant.
  3. Add lentils, potatoes, bay leaf, and vegetable broth. Bring to a boil, then reduce heat and simmer for 35–40 minutes until lentils are tender.
  4. Stir in spinach or kale and cook for another 5 minutes until wilted. Remove bay leaf.
  5. Adjust seasoning, add lemon juice if desired, and serve hot.

Notes

This soup is vegan, gluten-free, and freezer-friendly. Store leftovers in the fridge for up to 4 days or freeze for 3 months.
