This Hearty Lentil Soup is filling, wholesome, and packed with vegetables and spices. A comforting plant-based dish that makes a perfect weeknight dinner or meal-prep option.

- 1 1/2 cups dried green or brown lentils, rinsed
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 medium potatoes, cubed
- 1 red bell pepper, diced
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp dried oregano
- 1 bay leaf
- 8 cups vegetable broth
- 2 tbsp olive oil
- Salt and black pepper to taste
- 2 cups chopped spinach or kale
- Juice of 1 lemon (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, garlic, and bell pepper. Cook for 5 minutes until softened.
- Stir in cumin, paprika, oregano, salt, and pepper. Cook for 1 minute until fragrant.
- Add lentils, potatoes, bay leaf, and vegetable broth. Bring to a boil, then reduce heat and simmer for 35–40 minutes until lentils are tender.
- Stir in spinach or kale and cook for another 5 minutes until wilted. Remove bay leaf.
- Adjust seasoning, add lemon juice if desired, and serve hot.
Notes
This soup is vegan, gluten-free, and freezer-friendly. Store leftovers in the fridge for up to 4 days or freeze for 3 months.
