- 1 1/2 lbs boneless, skinless chicken breasts
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney or pinto beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 1 can (10 oz) Rotel tomatoes with green chilies
- 4 cups chicken broth
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp oregano
- Salt and black pepper, to taste
- Juice of 1 lime
- Optional toppings: tortilla strips, shredded cheese, sour cream, avocado, cilantro

- Add chicken breasts to the crockpot.
- Add onion, garlic, beans, corn, diced tomatoes, Rotel tomatoes, and chicken broth.
- Stir in chili powder, cumin, paprika, oregano, salt, and pepper.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Remove chicken, shred with two forks, and return to the slow cooker.
- Stir in fresh lime juice.
- Serve hot with your favorite toppings.
Notes
This soup freezes beautifully. For extra heat, add a pinch of cayenne or extra Rotel. Crushed tortilla chips stirred in just before serving make it even heartier.
