- 1 1/2 lbs boneless, skinless chicken breasts
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney or pinto beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (10 oz) can Rotel diced tomatoes with green chilies
- 1 (14.5 oz) can diced tomatoes
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 packet taco seasoning
- 1 tsp ground cumin
- 1 tsp chili powder
- 4 cups chicken broth
- Salt and pepper, to taste
- Optional toppings: tortilla strips, shredded cheese, sour cream, avocado, cilantro

- Place chicken breasts in the bottom of the crockpot.
- Add beans, corn, diced tomatoes, onion, and garlic.
- Sprinkle in taco seasoning, cumin, chili powder, salt, and pepper.
- Pour chicken broth over everything and stir gently.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Remove chicken, shred with two forks, and return to the soup.
- Stir well and cook an additional 10–15 minutes.
- Serve hot with desired toppings.
Notes
For extra heat, add diced jalapeños or hot Rotel. This soup thickens as it sits and tastes even better the next day. Freeze leftovers for up to 3 months.
