- 2 lbs boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) pinto or kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (28 oz) diced tomatoes
- 1 can (10 oz) Rotel diced tomatoes with green chilies
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 packet taco seasoning
- 1 tsp cumin
- 1 tsp chili powder
- 4 cups chicken broth
- Salt and pepper to taste

- Place chicken in the bottom of the crockpot.
- Add beans, corn, diced tomatoes, Rotel, onion, and garlic.
- Sprinkle taco seasoning, cumin, chili powder, salt, and pepper over the top.
- Pour in chicken broth.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Remove chicken, shred it with forks, and return it to the soup.
- Stir well and cook 10 more minutes.
- Serve with tortilla strips, shredded cheese, sour cream, avocado, or cilantro.
Notes
For thicker soup, mash some of the beans or use an immersion blender. Add a squeeze of lime juice for brightness and extra heat with diced jalapeños if desired.
