  • 2 lbs boneless, skinless chicken breasts
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (10 oz) can diced tomatoes with green chilies (Rotel)
  • 1 (14.5 oz) can fire-roasted diced tomatoes
  • 4 cups chicken broth
  • 2 tbsp tomato paste
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp oregano
  • ¾ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • Juice of 1 lime
  • Optional toppings: tortilla strips, avocado, shredded cheese, sour cream, cilantro

  1. Add chicken breasts to the crockpot.
  2. Add onion, garlic, beans, corn, tomatoes, broth, tomato paste, and spices.
  3. Stir gently to combine.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  5. Remove chicken and shred using two forks.
  6. Return shredded chicken to the crockpot.
  7. Stir in lime juice and olive oil.
  8. Taste and adjust seasoning if needed.
  9. Serve hot with desired toppings.

Notes

🌮 Tip: For thicker soup, mash some of the beans before cooking or add crushed tortilla chips during the last 20 minutes. This soup freezes beautifully for easy meals later.
