- 2 lbs boneless, skinless chicken breasts
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can pinto beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chilies (Rotel)
- 1 (14.5 oz) can fire-roasted diced tomatoes
- 4 cups chicken broth
- 2 tbsp tomato paste
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp oregano
- ¾ tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
- Juice of 1 lime
- Optional toppings: tortilla strips, avocado, shredded cheese, sour cream, cilantro

- Add chicken breasts to the crockpot.
- Add onion, garlic, beans, corn, tomatoes, broth, tomato paste, and spices.
- Stir gently to combine.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Remove chicken and shred using two forks.
- Return shredded chicken to the crockpot.
- Stir in lime juice and olive oil.
- Taste and adjust seasoning if needed.
- Serve hot with desired toppings.
