- 1 cup frozen corn
- 1 (10 oz) can diced tomatoes with green chilies (like Rotel), undrained
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper, to taste
- 8 small corn tortillas, cut into quarters
- 2 cups shredded Mexican blend or cheddar cheese
- Chopped cilantro, sour cream, avocado (for serving)
Instructions
- Layer base: Add chicken, enchilada sauce, beans, corn, tomatoes, cumin, chili powder, salt, and pepper to the crockpot. Stir gently to combine.
- Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is fully cooked and tender.
- Shred chicken: Remove chicken, shred with two forks, and return to the slow cooker. Stir to combine.
- Add tortillas and cheese: Layer in the cut tortillas and half of the shredded cheese. Stir gently. Top with remaining cheese.
- Finish cooking: Cover and cook for another 30 minutes until cheese is melted and everything is heated through.
- Serve: Scoop into bowls and top with your favorite garnishes like sour cream, avocado, and cilantro.
Notes
Swap corn tortillas for flour if preferred. Add jalapeños or hot sauce for a spicy kick. Leftovers reheat well and make a great meal-prep option!
