Description

Ingredients

  • 1 large head of cauliflower, cut into florets
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • 1/2 cup shredded cheddar or Gruyère cheese (optional)
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste
  • Fresh parsley or chives, for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Toss cauliflower florets with 1 tbsp olive oil, salt, and pepper. Roast for 25–30 minutes until golden brown.
  2. In a large pot, heat remaining olive oil. Sauté onion and garlic until soft and fragrant.
  3. Add roasted cauliflower and vegetable broth. Simmer for 10–15 minutes.
  4. Blend with an immersion blender until smooth and creamy.
  5. Stir in heavy cream (or coconut milk), smoked paprika, and optional cheese. Adjust seasoning.
  6. Serve warm, garnished with parsley or chives.

Notes

For a lighter soup, substitute the cream with unsweetened almond or oat milk. For a protein boost, stir in white beans before blending.
