- 1 large head of cauliflower, cut into florets
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 cup heavy cream (or coconut milk for dairy-free)
- 1/2 cup shredded cheddar or Gruyère cheese (optional)
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- Fresh parsley or chives, for garnish
Instructions
- Preheat oven to 400°F (200°C). Toss cauliflower florets with 1 tbsp olive oil, salt, and pepper. Roast for 25–30 minutes until golden brown.
- In a large pot, heat remaining olive oil. Sauté onion and garlic until soft and fragrant.
- Add roasted cauliflower and vegetable broth. Simmer for 10–15 minutes.
- Blend with an immersion blender until smooth and creamy.
- Stir in heavy cream (or coconut milk), smoked paprika, and optional cheese. Adjust seasoning.
- Serve warm, garnished with parsley or chives.
Notes
For a lighter soup, substitute the cream with unsweetened almond or oat milk. For a protein boost, stir in white beans before blending.
