- 1 lb ground beef
- 1 medium head of cabbage, chopped
- 1 large onion, diced
- 3 garlic cloves, minced
- 3 carrots, sliced
- 3 celery stalks, chopped
- 1 bell pepper, diced
- 1 can (28 oz) crushed tomatoes
- 6 cups beef broth
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 1 tsp thyme
- Salt and black pepper, to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium-high heat. Add ground beef and cook until browned. Drain excess fat if needed.
- Stir in onion and garlic, cooking for 2–3 minutes until fragrant.
- Add carrots, celery, bell pepper, and cabbage. Cook for 5 minutes to soften slightly.
- Pour in crushed tomatoes and beef broth. Stir in oregano, paprika, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30–35 minutes until vegetables are tender and flavors blend.
- Serve hot, optionally topped with fresh parsley or shredded cheese.
Notes
This soup is great for meal prep and freezes well. Swap ground beef with ground turkey for a lighter version.
