- 1 tbsp coconut oil or olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper (optional)
- 2 medium sweet potatoes, peeled and diced
- 1 cup brown lentils, rinsed
- 1 can (14 oz) diced tomatoes
- 3 cups vegetable broth
- Salt and black pepper, to taste
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Heat coconut oil in a large pot over medium heat. SautΓ© onion for 4β5 minutes until translucent.
- Add garlic, ginger, cumin, coriander, turmeric, paprika, and cayenne. Cook 1β2 minutes until fragrant.
- Add sweet potatoes, brown lentils, diced tomatoes, and vegetable broth. Stir to combine.
- Bring to a boil, then reduce heat and simmer 25β30 minutes until lentils and sweet potatoes are tender.
- Season with salt and black pepper. Serve hot, garnished with fresh cilantro and a squeeze of lime.
