Ingredients

  • 1 lb lean ground turkey (or chicken)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 1 (10 oz) can Rotel (tomatoes with green chilies)
  • 1 packet low-sodium taco seasoning (or homemade blend)
  • Salt and pepper, to taste
  • Optional toppings: avocado, cilantro, lime wedges, plain Greek yogurt (instead of sour cream)

Instructions

  1. In a large pot, cook ground turkey with onion and garlic until fully cooked. Drain any excess liquid.
  2. Add black beans, kidney beans, corn, diced tomatoes, tomato sauce, and Rotel.
  3. Stir in taco seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20–25 minutes.
  5. Serve hot with optional healthy toppings like avocado, cilantro, lime, or Greek yogurt.

Notes

For extra fiber, add chopped bell peppers or zucchini. This soup freezes well and is perfect for meal prep or quick lunches.
