  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, finely diced (optional)
  • 1/3 cup crumbled cotija or feta cheese
  • For the Dressing:
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons light mayo (or olive oil)
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste

Instructions

  1. Cook the Pasta: Cook pasta according to package directions. Drain and rinse with cold water. Set aside to cool.
  2. Prepare the Dressing: In a bowl, whisk together Greek yogurt, mayo, lime juice, chili powder, garlic powder, salt, and pepper.
  3. Assemble the Salad: In a large mixing bowl, combine cooked pasta, corn, red onion, cilantro, jalapeño (if using), and cheese.
