- 2 cups corn (grilled, canned, or frozen & thawed)
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, finely diced (optional)
- 1/3 cup crumbled cotija or feta cheese
- For the Dressing:
- 1/2 cup plain Greek yogurt
- 2 tablespoons light mayo (or olive oil)
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and black pepper, to taste
Instructions
- Cook the Pasta: Cook pasta according to package directions. Drain and rinse with cold water. Set aside to cool.
- Prepare the Dressing: In a bowl, whisk together Greek yogurt, mayo, lime juice, chili powder, garlic powder, salt, and pepper.
- Assemble the Salad: In a large mixing bowl, combine cooked pasta, corn, red onion, cilantro, jalapeño (if using), and cheese.
- Toss and Chill: Pour dressing over the salad and toss to coat evenly. Chill for 20–30 minutes before serving for best flavor.
Notes
Grill your corn for smoky flavor and char! You can use Mexican crema instead of yogurt for a more traditional touch. Add grilled chicken or black beans to turn it into a complete meal.
