Description
This healthy version of the classic Zuppa Toscana is made lighter with turkey sausage, coconut milk, and loads of hearty vegetables. It’s rich, comforting, and comes together effortlessly in the slow cooker – perfect for cozy weeknight dinners or meal prep.

- 1 lb ground turkey sausage (or chicken sausage)
- 1 yellow onion, diced
- 3 garlic cloves, minced
- 4 cups low-sodium chicken broth
- 4 cups chopped kale
- 4 medium Yukon gold potatoes, thinly sliced
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 1 (13.5 oz) can light coconut milk
- 1 tablespoon olive oil (if browning sausage beforehand)
- Fresh parsley or red pepper flakes for garnish
Instructions
- Optional prep: In a skillet over medium heat, sauté turkey sausage with olive oil until lightly browned. Add onion and garlic, cook 2–3 more minutes. (Skip this step for a dump-and-go version.)
- Combine in slow cooker: Add browned sausage, onion, garlic, broth, potatoes, kale, seasoning, salt, and pepper to the slow cooker.
- Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours, until potatoes are tender.
- Add coconut milk: Stir in the coconut milk in the last 15–20 minutes. Taste and adjust seasoning.
- Serve: Ladle into bowls and garnish with fresh herbs or red pepper flakes. Enjoy!
Notes
For extra protein, stir in a can of white beans or add cooked chicken at the end. For a creamier version, mash a few cooked potatoes before adding the coconut milk.
