Description

This Healthy Slow Cooker Zuppa Toscana Soup is a lighter version of the classic Tuscan soup, packed with Italian sausage, kale, potatoes, and a flavorful broth. Perfect for a hands-off, hearty meal.


Ingredients

  • 1 lb lean Italian turkey sausage or chicken sausage, sliced
  • 4 cups chicken broth (low sodium)
  • 3 medium russet potatoes, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chopped kale, stems removed
  • 1 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/2 cup milk or unsweetened almond milk
  • Salt and black pepper to taste
  • Grated Parmesan for garnish (optional)

Instructions

  1. In a skillet, lightly brown the sausage over medium heat, about 5 minutes. Transfer to the slow cooker.
  2. Add diced potatoes, onion, garlic, chicken broth, oregano, and red pepper flakes.
  3. Cover and cook on low for 6–7 hours or high for 3–4 hours until potatoes are tender.
  4. Stir in chopped kale and cook for another 10–15 minutes until wilted.
  5. Add milk and stir to combine. Season with salt and pepper to taste.
  6. Serve hot, garnished with Parmesan if desired.

Notes

For a vegetarian version, substitute sausage with plant-based sausage or omit entirely. This soup freezes well for up to 3 months.
