This Healthy Slow Cooker Zuppa Toscana Soup is a lighter version of the classic Tuscan soup, packed with Italian sausage, kale, potatoes, and a flavorful broth. Perfect for a hands-off, hearty meal.
Ingredients

- 1 lb lean Italian turkey sausage or chicken sausage, sliced
- 4 cups chicken broth (low sodium)
- 3 medium russet potatoes, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chopped kale, stems removed
- 1 tsp dried oregano
- 1/2 tsp crushed red pepper flakes (optional)
- 1/2 cup milk or unsweetened almond milk
- Salt and black pepper to taste
- Grated Parmesan for garnish (optional)
Instructions
- In a skillet, lightly brown the sausage over medium heat, about 5 minutes. Transfer to the slow cooker.
- Add diced potatoes, onion, garlic, chicken broth, oregano, and red pepper flakes.
- Cover and cook on low for 6–7 hours or high for 3–4 hours until potatoes are tender.
- Stir in chopped kale and cook for another 10–15 minutes until wilted.
- Add milk and stir to combine. Season with salt and pepper to taste.
- Serve hot, garnished with Parmesan if desired.
Notes
For a vegetarian version, substitute sausage with plant-based sausage or omit entirely. This soup freezes well for up to 3 months.
