- 2–3 chipotle peppers in adobo sauce, chopped (adjust to taste)
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
- Optional toppings: avocado, cilantro, lime wedges
Instructions
- Add all ingredients to the slow cooker and stir to combine.
- Cover and cook on low for 6–8 hours or on high for 3–4 hours, until vegetables are tender and flavors meld.
- Adjust seasoning as needed. Serve hot with optional toppings like avocado, cilantro, or lime wedges.
Notes
For extra smoky flavor, add more chipotle peppers or a dash of smoked paprika. This chili is naturally vegetarian and can be made vegan by skipping any dairy toppings.
